Roasted Creamy Garlic Chicken & Broccoli

Ingredients
  

Chicken

  • 800 g Chicken breast cut into thin fillets
  • 1 Tbsp Oregano
  • 1 Tbsp Garlic Powder
  • 1/2 Tbsp Chili Flakes
  • 1 Tbsp Paprika
  • 2 Tsp Olive Oil

Broccoli Mix

  • 600 g Raw Broccoli cut into small pieces
  • 1.5 Tsp Chili Flakes
  • 1.5 Tsp Garlic Powder
  • 1.5 Tsp Salt
  • 1.5 Tsp Black Pepper
  • 40 g Parmesan Cheese
  • 100 g Chopped Red Onion
  • 2 Tsp Olive Oil

White Sauce

  • 100 g Low Fat Yogurt
  • 80 g Light Mayo
  • 5 Roasted Garlic Cloves
  • 80 g Light Feta Cheese
  • 20 g Honey
  • 1/4 cup Lemon Juice
  • 5 Cloves Garlic

Instructions
 

Broccoli

  • Mix seasoning (1.5 Tsp Chili Flakes, 1.5 Tsp Garlic Powder, 1.5 Tsp Salt, 1.5 Tsp Black Pepper, 40 g Parmesan Cheese, 100 g Chopped Red Onion)
  • Coat broccoli with olive oil and then add the seasoning mix
  • Oven Bake or Air Fry for 15-16 mins at 200C / 400F
  • Add whole cloves of garlic to air fry at the same time for White Sauce.

Chicken

  • Mix seasonings (1 Tbsp Oregano, 1 Tbsp Garlic Powder, 1/2 Tbsp Chili Flakes, 1 Tbsp Paprika)
  • Coat chicken with olive oil and then add the seasoning mix
  • Cook on medium heat for 5-6 mins each side until golden
  • Let the chicken rest and chop into cubes

White Sauce

  • Add all ingredients to a small blender until creamy. (100 g Low Fat Yogurt, 80 g Light Mayo, 5 Roasted Garlic Cloves, 80 g Light Feta Cheese, 20 g Honey, 1/4 cup Lemon Juice ,5 Cloves Garlic)

Notes

- When cooking the broccoli, make sure it does not burn as that will add a bitter taste to the whole dish
- This stores perfectly in the fridge and is great to eat cold or you can warm it up a little in the air fryer for 5 mins
