Roasted Creamy Garlic Chicken & Broccoli
An incredibly delicious low carb and high protein meal, so filling and packed with flavor - This is perfect for meal prep and easy to make!
Ingredients
Chicken
- 800 g Chicken breast cut into thin fillets
- 1 Tbsp Oregano
- 1 Tbsp Garlic Powder
- 1/2 Tbsp Chili Flakes
- 1 Tbsp Paprika
- 2 Tsp Olive Oil
Broccoli Mix
- 600 g Raw Broccoli cut into small pieces
- 1.5 Tsp Chili Flakes
- 1.5 Tsp Garlic Powder
- 1.5 Tsp Salt
- 1.5 Tsp Black Pepper
- 40 g Parmesan Cheese
- 100 g Chopped Red Onion
- 2 Tsp Olive Oil
White Sauce
- 100 g Low Fat Yogurt
- 80 g Light Mayo
- 5 Roasted Garlic Cloves
- 80 g Light Feta Cheese
- 20 g Honey
- 1/4 cup Lemon Juice
- 5 Cloves Garlic
Instructions
Broccoli
- Mix seasoning (1.5 Tsp Chili Flakes, 1.5 Tsp Garlic Powder, 1.5 Tsp Salt, 1.5 Tsp Black Pepper, 40 g Parmesan Cheese, 100 g Chopped Red Onion)
- Coat broccoli with olive oil and then add the seasoning mix
- Oven Bake or Air Fry for 15-16 mins at 200C / 400F
- Add whole cloves of garlic to air fry at the same time for White Sauce.
Chicken
- Mix seasonings (1 Tbsp Oregano, 1 Tbsp Garlic Powder, 1/2 Tbsp Chili Flakes, 1 Tbsp Paprika)
- Coat chicken with olive oil and then add the seasoning mix
- Cook on medium heat for 5-6 mins each side until golden
- Let the chicken rest and chop into cubes
White Sauce
- Add all ingredients to a small blender until creamy. (100 g Low Fat Yogurt, 80 g Light Mayo, 5 Roasted Garlic Cloves, 80 g Light Feta Cheese, 20 g Honey, 1/4 cup Lemon Juice ,5 Cloves Garlic)
Notes
- When cooking the broccoli, make sure it does not burn as that will add a bitter taste to the whole dish
- This stores perfectly in the fridge and is great to eat cold or you can warm it up a little in the air fryer for 5 mins
